Marcella Hazan-Style Tomato Soup

By: Anonymous Souper Soldier "tomato soup" by stu_spivack is licensed under CC BY-SA 2.0 Note: Basically this is Marcella Hazan's tomato sauce but thinned with some stock and the onion left in and seriously it's some of the best tomato soup. The EVOO brightens up the soup considerably and may need a little tweaking but it's still a dang good vegetarian soup. INGREDIENTS: 1x 28 oz can of italian style whole peeled tomatoes 1/2 onion coarsely chopped 4 tablespoons unsalted butter (Or equivalent EVOO for vegetarian) 1.5 cups water, vegetable stock, or chicken stock 1/2 teaspoon salt Cream (optional) (I add a pinch of red pepper flakes) DIRECTIONS: Melt butter in pot. Throw all ingredients into pot. Simmer 40-45 minutes Blitz with a blender or immersion blender Add cream if you wish to make this more like a bisque

EQD (Easy Quick Delicious) Soup

By: PaprikaPink Image Source Unknown (2 servings, 20 minutes) INGREDIENTS: 1/4 cup good olive oil 4 to 8 garlic peeled garlic cloves 14oz can diced tomatoes with juice 2 tbsp capers 2 tsp dried basil Dried red pepper flakes 2 cups chicken/vegetable broth Garnish: Parmesan, croutons, kalamata olives Optional: rice, garbanzos, pasta, chicken, anything you have laying around... DIRECTIONS: Warm olive oil in a saucepan. Add garlic cloves. Remove from heat and let steep 10 minutes Remove garlic cloves (or leave em in, whatev), return to med-low heat Add one 14oz can diced tomatoes with juice, 2 tablespoons capers, 2 teaspoons dried basil, a shake of dried red pepper flakes, 2 cups chicken (or vegetable) broth. Warm through for 5 or 10 minutes. Serve as-is or top with parmesan, croutons, chopped kalamata olives. You can also optionally add rice, garbanzos, pasta, chicken...pretty much anything. If you omit the chicken broth, the tomato mixture is also great as pasta sauce. Enjoy!

Potato Soup

By @shawnboa INGREDIENTS: 6 - 8 potatoes: bite size Celery 2 small onions Water OR chicken broth OR vegetable broth 1/3 cup minute rice Milk Butter DIRECTIONS Cover with water or broth and cook slowly until boiling gently Add 1/3 cup minute rice. Simmer till thick. Season to taste When ready to serve, add milk and generous pat of butter
