Potato Leek Soup

INGREDIENTS:

  • 1/4 cup butter
  • 4 medium leeks, cleaned & sliced into thin half moons (some of the green part is okay)
  • 4 cups chicken stock
  • 3 medium potatoes, peeled, cut into small cubes
  • 2 cups milk (or sub 1 can coconut milk)
  • Plenty of salt & pepper, to taste
  • Smoked ham or turkey or cooked bacon (optional)
  • 2 peeled & shredded carrots (optional)

DIRECTIONS:

  • Melt butter in large soup pot over medium heat. Add leeks & sauté until soft. Pour in chicken stock, increase heat to high and bring to a boil.
  • Add potatoes, cover, reduce heat to medium-low & simmer until potatoes are fork-tender. Add meat if desired.
  • Increase heat to medium. Slowly add milk while stirring, bringing soup to a slow boil. Cook until soup thickens slightly.
  • Season with salt & pepper. Will take a good amount of both unless you added salted meat. Sprinkle with raw shredded carrots just before serving, if desired.

Serves 4-6. Scales well, never been too fussy about getting volumes exact anyhow. Freezes okay but not great.
