Marcella Hazan-Style Tomato Soup

Note: Basically this is Marcella Hazan's tomato sauce but thinned with some stock and the onion left in and seriously it's some of the best tomato soup. The EVOO brightens up the soup considerably and may need a little tweaking but it's still a dang good vegetarian soup. 

INGREDIENTS:

  • 1x 28 oz can of italian style whole peeled tomatoes
  • 1/2 onion coarsely chopped
  • 4 tablespoons unsalted butter (Or equivalent EVOO for vegetarian)
  • 1.5 cups water, vegetable stock, or chicken stock
  • 1/2 teaspoon salt
  • Cream (optional)
  • (I add a pinch of red pepper flakes)

DIRECTIONS:

  • Melt butter in pot.
  • Throw all ingredients into pot. 
  • Simmer 40-45 minutes
  • Blitz with a blender or immersion blender
  • Add cream if you wish to make this more like a bisque
