INGREDIENTS:
- 1/4 cup good olive oil
- 4 to 8 garlic peeled garlic cloves
- 14oz can diced tomatoes with juice
- 2 tbsp capers
- 2 tsp dried basil
- Dried red pepper flakes
- 2 cups chicken/vegetable broth
- Garnish: Parmesan, croutons, kalamata olives
- Optional: rice, garbanzos, pasta, chicken, anything you have laying around...
DIRECTIONS:
- Warm olive oil in a saucepan. Add garlic cloves. Remove from heat and let steep 10 minutes
- Remove garlic cloves (or leave em in, whatev), return to med-low heat
- Add one 14oz can diced tomatoes with juice, 2 tablespoons capers, 2 teaspoons dried basil, a shake of dried red pepper flakes, 2 cups chicken (or vegetable) broth. Warm through for 5 or 10 minutes.
- Serve as-is or top with parmesan, croutons, chopped kalamata olives.
- You can also optionally add rice, garbanzos, pasta, chicken...pretty much anything. If you omit the chicken broth, the tomato mixture is also great as pasta sauce. Enjoy!
