Brazilian Black Bean Stew

INGREDIENTS:

  • 2 tbsp canola oil
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced) (or let's be real, as much garlic as your heart desires)
  • 2 tbsp ground cumin
  • 1 red bell pepper (chopped)
  • Butternut squash (peeled and diced)
  • Sweet potato (peeled and diced) (equivalent quantities of sweet potato and butternut squash)
  • 1 can crushed tomatoes (14oz)
  • 1 can diced tomato with chili peppers
  • 1-2 cups vegetable broth (or however much you need)
  • 2 mangos (peeled, seeded, diced)
  • 2 cans black beans (drained + rinsed)
  • 1/4 cup chopped fresh cilantro
  • 1/4 tsp salt
  • Black pepper to taste


INSTRUCTIONS:

  • Heat oil in large pot over medium heat
  • Add onions, garlic, and cumin. Cook until tender.
  • Mix in squash, sweet potatoes, bell pepper, canned tomatoes, and broth
  • Bring to a boil, then reduce heat to low and simmer until sweet potatoes cooked through (about 15 minutes)
  • Stir beans into pot, and cook covered until heated through
  • Stir in mango and cilantro, and season with salt and pepper
