INGREDIENTS:
- 2 tbsp canola oil
- 1 medium onion (chopped)
- 2 cloves garlic (minced) (or let's be real, as much garlic as your heart desires)
- 2 tbsp ground cumin
- 1 red bell pepper (chopped)
- Butternut squash (peeled and diced)
- Sweet potato (peeled and diced) (equivalent quantities of sweet potato and butternut squash)
- 1 can crushed tomatoes (14oz)
- 1 can diced tomato with chili peppers
- 1-2 cups vegetable broth (or however much you need)
- 2 mangos (peeled, seeded, diced)
- 2 cans black beans (drained + rinsed)
- 1/4 cup chopped fresh cilantro
- 1/4 tsp salt
- Black pepper to taste
INSTRUCTIONS:
- Heat oil in large pot over medium heat
- Add onions, garlic, and cumin. Cook until tender.
- Mix in squash, sweet potatoes, bell pepper, canned tomatoes, and broth
- Bring to a boil, then reduce heat to low and simmer until sweet potatoes cooked through (about 15 minutes)
- Stir beans into pot, and cook covered until heated through
- Stir in mango and cilantro, and season with salt and pepper
