INGREDIENTS:
- 55g (1/4 cup) unsalted butter
- 4 Leeks, cleaned and finely chopped
- 1 stalk celery, finely chopped
- 1 carrot, finely chopped
- 30g (1/4 cup) All purpose flour
- 2L (8 cups) Homemade Mushroom Broth
- 2 Russet potatoes, peeled and diced
- 4 Sausage Links, cut into fine slices or cubed
- 1/2 teaspoon black peppercorns, cracked
INSTRUCTIONS:
- In a large sauce pan over medium heat, melt the butter. Add the carrots and celery and sauté until soft, about 5 minutes. Add the leeks and flour and cook, stirring, about 3 minutes. Add stock and bring to a boil, then reduce heat and simmer partially covered for 15 minutes.
- Add potatoes and sausage. simmer soup, partially covered, until potatoes are tender, 10 to 15 minutes. Season with salt and white pepper.
- Can substitute potatoes with any carb; Macaroni, Tortellini, etc
Total time: 2 hours.
