Vegan Minestrone

INGREDIENTS:

  • 2 tbsp olive oil
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 medium zucchini, diced
  • 1 cup green beans
  • 28 oz diced tomatoes
  • 6 cups vegetable broth
  • 14 oz cannellini beans, drained and rinsed
  • 1 cup pasta
  • 1 tsp dried basil
  • ½ tsp dried oregano
  • ½ tsp dried thyme
  • Salt and pepper

DIRECTIONS:

  • Heat oil in a large stockpot.  Add onion, garlic, carrot, and celery.  Cook 5 minutes, until lightly browned.  
  • Add zucchini, green beans, and tomatoes.  
  • Stir in broth, beans, pasta, basil, oregano, and thyme.  
  • Simmer until beans are tender, 35 minutes.  
  • Season with salt and pepper.
