INGREDIENTS:
- 2 tbsp olive oil
- 1 small onion, chopped
- 3 cloves garlic, minced
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 1 medium zucchini, diced
- 1 cup green beans
- 28 oz diced tomatoes
- 6 cups vegetable broth
- 14 oz cannellini beans, drained and rinsed
- 1 cup pasta
- 1 tsp dried basil
- ½ tsp dried oregano
- ½ tsp dried thyme
- Salt and pepper
DIRECTIONS:
- Heat oil in a large stockpot. Add onion, garlic, carrot, and celery. Cook 5 minutes, until lightly browned.
- Add zucchini, green beans, and tomatoes.
- Stir in broth, beans, pasta, basil, oregano, and thyme.
- Simmer until beans are tender, 35 minutes.
- Season with salt and pepper.
