Barley Soup

(these measurements are approximate, keep adding water until it's the thickness you want) 


INGREDIENTS:

  • 2.5 cups of pearl barley 
  • 10 cups of water/broth (use vegetable bullion and water) 
  • Olive oil
  • 2 onions
  • 5 carrots 
  • 1 lb mushrooms  
  • 6 cloves garlic 
  • Bay leaves, rosemary, thyme, salt, black pepper 
OPTIONAL INGREDIENTS:
  • Celery
  • Kale
  • White beans
  • Canned tomatoes
  • Random vegetables in your crisper

INSTRUCTIONS:

  • Chop the vegetables fairly fine
  • Saute the onions and mushrooms in olive oil, adding garlic at the end. 
  • If you're adding optional ingredients, add them now
  • Add the water, bring to a boil
  • Add barley and seasonings. Cover and simmer for at least an hour or until the barley is easy to bite. Season with more herbs.
