Vegetarian Tortilla Stew

INGREDIENTS

  • 2 tbsp vegetable oil
  • 1 medium onion (chopped)
  • 1 red bell pepper (chopped)
  • 2 cloves garlic (minced) (or let's be real, as much garlic as your heart desires)
  • 2 tbsp ground cumin
  • 1 can crushed tomatoes (28oz)
  • 1 can chopped green chili peppers (4oz)
  • 1-2 cartons vegetable broth (32oz)
  • Salt and pepper to taste
  • 2 baking potatoes or equivalent (peeled & diced)
  • 1-2 cans black beans (14oz) (drained + rinsed)
  • 2 cups frozen/canned corn
  • 1/2 cup chopped cilantro
  • Tortilla chips
  • +1 cup shredded cheese (cheddar, Mexican 4-cheese mix, etc)
  • 1-2 avocado (pitted + sliced)
  • Lime juice
  • Sour cream


INSTRUCTIONS:

  • Heat oil in large pot over medium heat
  • Stir in garlic, onions, pepper, and cumin. Sauté for 5 mins or until vegetables are tender.
  • Mix in tomatoes and chili peppers, pour in broth, season with salt and pepper
  • Add in potatoes, and bring to boil. Reduce heat and simmer until potatoes cooked through
  • Mix corn and beans into stew & continue cooking 5 minutes
  • Serve with tortilla chips in bowl, and other items to taste (cheese, cilantro, avocado, lime juice, sour cream)
