Greek Orzo, Lemon & Chicken Soup

INGREDIENTS:

  • 10 cups Chicken Stock
  • 3/4 cup orzo
  • 4 eggs lightly beaten with a forc
  • Juice of 3 lemons
  • Zest of 2 lemons
  • 1 cup coarsely chopped cooked chicken
  • 1 pound fresh spinach
  • Salt & pepper to taste

DIRECTIONS:

  • Heat stock in a stockpot and bring to boil.
  • Add orzo and boil for 5 minutes
  • While stirring constantly, drizzle eggs into boiling stock and continue stirring for 30 seconds until eggs cook into threads
  • Add lemon juice, zest, chicken, spinach, salt, and pepper. 
  • Return to boil and then serve immediately.
