INGREDIENTS:
- 10 cups Chicken Stock
- 3/4 cup orzo
- 4 eggs lightly beaten with a forc
- Juice of 3 lemons
- Zest of 2 lemons
- 1 cup coarsely chopped cooked chicken
- 1 pound fresh spinach
- Salt & pepper to taste
DIRECTIONS:
- Heat stock in a stockpot and bring to boil.
- Add orzo and boil for 5 minutes
- While stirring constantly, drizzle eggs into boiling stock and continue stirring for 30 seconds until eggs cook into threads
- Add lemon juice, zest, chicken, spinach, salt, and pepper.
- Return to boil and then serve immediately.
